You can make this nutritious soup about as fast as you can open the cans. This is really, really tasty. I don't specify the can size, because it's really not crucial. Just dump the stuff together and enjoy. To keep it healthy, go easy on the garnishes and/or use healthier versions.
Ingredients
- 2 T minced onion flakes
- 1 can chili beans
- 1 can black beans
- 1 can corn
- 1 can tomato sauce
- 1 can chicken broth
- 2 cans diced tomatoes (undrained)
- 3 T taco seasoning mix
- hot sauce to taste
- 20 oz cooked chicken, shredded
- Shredded cheese
- Sour cream
- Crushed tortilla chips
- Sliced avocado
Instructions
- Mix all but last four ingredients in a 4-quart pot.
- Simmer 15 minutes.
- Serve with last four ingredients as garnishes.

Avocado!!! You must add a couple of slices of avocado to each bowl of taco soup. I was going to make taco salad tonight, but taco soup sounds really good….& I’m going to try your recipe!

I like the idea about the avocado garnish, I love avocado in anything resembling a Mexican inspired dish. I have never actually had Taco soup before, this is about as easy as it gets too.
